Are you looking for a healthy alternative to ice-cream or gelato? Than keep on reading. It was originally a soup that I tasted at my friends’s. I liked it so much that I decided to try to make it myself. BUT, there was no Canteloup melon in our grocery store. I decided to substitute it with a melon that has a similar taste- Chanterais. If you want to make it as a soup, just add salt and pepper. And for a dessert, you leave it as it is. You can even add more orange juice to make it sweeter. The preparation is very simple and fast. Besides the ingredients that are listed below, you will need a blender and an ice-cream scoop (to scoop out the melon).
WHAT YOU NEED (serves 4 people):
- 1 Chanterais melon
- 1 freshly squeezed orange juice
- 1 tbs of freshly squeezed lime
FOR SOUP:
- a pinch of salt and pepper
- fresh mint leaves to garnish.
FOR DESSERT:
- summer fruits (strawberries, blueberries, banana, blackberries- depends on you).
- plain white yogurt.
DIRECTIONS:
Peel and seed the melon. Scoop out the inside and let it chill in the fridge for ½ hour.
When chilled, put it in a blender. Add freshly squeezed orange and lime juice. Blend until smooth and frothy.
a) If you want to serve it is as a soup, add salt and pepper before you blend it. Serve in glass bowls and garnish with mint leaves.
b) If you serve it as a dessert: layer fruits, yogurt and blended melon in a tall glass. Serve.
