Although the title reads cream spinach soup, there is no cream inside. It is a very simple, healthy and tasty soup. And if you sprinkle some homemade popcorn on top, you will make it more filling.
I love soups, especially in winter- they warm you up and are easy to digest. Most of the time, we do not add any cream in our homemade soups. I don’t like the taste and I don’t think it is necessary. If you want to make it thicker, add one or two small potatoes. Alex made this soup the other day and I knew I had to share the recipe with you.
What you need:
- 250 grams of fresh spinach leaves
- 1 zucchini
- 1 carrot
- 1 onion
- 300 grams of green peas
- 1 red pepper
- 1/2 of leak
- 1 litre of vegetable stock
- salt and pepper
- optional: 1-2 potatoes, if you want to make it thicker
Chop the vegetables (zucchini, carrot, onion, red pepper and leak). Put them in a large pot, add green peas and a tablespoon of olive oil. Stir fry the vegetables. Add spinach leaves, vegetable stock and a pinch of salt and pepper. Cook on medium heat until soft. Once you can pierce the vegetables with a fork, puree it with a hand blender until smooth.
Make a popcorn (we use a hot-air popcorn maker) and serve it with the soup.
